One of the biggest dreams I’ve always had for Charrou is to one day have a physical space of our own. Not just a place to sell food, but a space that truly feels like home - somewhere people can experience what we do in person and connect with the story behind it.

We’re not there yet. But this collaboration with Lau Wang feels like a meaningful step in that direction.

It started with a conversation. I met Mark, the founder of Lau Wang, at a networking event, and we began exploring how Charrou’s roasted meats could come to life in a new dish. From the start, we knew we didn’t want to create something just for novelty. We wanted the flavours to work together and for the dish to feel intentional as a whole.

After a lot of R&D, we landed on Roasted Pork with Curry Leaf & Asparagus.

It’s definitely not the most traditional way people expect to see roasted pork, but that’s part of what makes it exciting for us. At Charrou, heritage and family craft will always be at the core of what we do, but we also believe tradition can be a starting point for something new. This dish gave us the chance to explore that in a way that still felt thoughtful and grounded.

More than anything, this collaboration means a lot because it gives people the chance to experience our roasted meats in a physical retail space through all 8 Lau Wang outlets. For a brand like ours, that feels significant. It may not be our own store yet, but it is a real step forward.

For my family and me, Charrou has always been built on persistence, belief, and the idea that giving up is never really an option. This collaboration is a reminder that progress doesn’t always come in the exact form you expect - sometimes it comes one conversation, one dish, and one opportunity at a time.

And for now, we’re grateful for that. We’ll keep building, keep pushing, and keep working toward the day Charrou finally has a space of its own - a space we can call home.
